These choose-your-own-adventure meringues let you pick the flavor—rich cocoa, tangy cranberry, or earthy matcha! Light, crisp, and melt-in-your-mouth dreamy, these little kisses are perfect for gifting, snacking, or just satisfying your sweet tooth.

  • Preheat your oven to 200°F. Line a baking sheet with parchment paper.

  • In a stand mixer with a whisk attachment, beat egg whites on medium speed until foamy.

  • Add the cream of tartar and salt. Increase the speed to high and continue beating until soft peaks form.

  • Gradually add the granulated sugar, one tablespoon at a time, beating well after each addition. Continue beating until the mixture is glossy and stiff peaks form. To ensure the sugar is fully dissolved, rub a small amount between your fingers; it should feel smooth, not gritty.

  • Add the flavoring and powdered sugar.
    • For cacao or cranberry powder: In a small bowl, mix the powdered sugar with your chosen flavoring. Sift this mixture into the meringue and gently fold until fully incorporated.

    • For matcha powder: Whisk the matcha with 2 teaspoons water to form a paste. Add the paste to the meringue and beat on medium speed until fully incorporated. Then, sift in the powdered sugar and fold gently.

  • Fit a piping bag with a star tip. (Optional: Use gel food coloring to paint 3 thin vertical stripes inside the piping bag for a swirl effect.) Pipe meringues approximately 1.5-inch in diameter onto the prepared baking sheet.

  • Bake for 1 hour without opening the oven door. After baking, turn off the oven and leave the meringues inside for an additional 2 hours to dry completely. They are ready when they feel dry to the touch and lift easily from the parchment paper.

Meringue kisses can be stored in an airtight container at room temperature for up to 2 weeks.
tips
Ensure your mixing bowl and whisk are free from any grease or residue and make sure no yolks find their way into the bowl, as this can prevent the egg whites from whipping properly.

Room temperature egg whites whip better. Let your egg whites sit at room temperature for 30 minutes before beating.
