Chicken Spiedini is a delicious and tender chicken skewer recipe made with chicken thighs marinated in lemon, garlic, and olive oil, then tossed in seasoned breadcrumbs. It is grilled to crispy perfection on the grill for the perfect summer chicken dish!

- If using whole dried lemon peels and peppercorns, add them to your peppermill and grind them into a bowl. Then add the rest of the marinade ingredients and whisk together.
- Season chicken thighs with salt and pepper. Chop into 1-inch pieces. Mix the chicken thighs with the marinade well. Cover and marinate in the fridge for at least 1 hour but up to 4 hours.
- Combine all of the ingredients for the breadcrumb mixture on a plate. Remove the chicken from the fridge and slide the chicken pieces onto your skewer tightly packed together.
- Preheat the grill to high heat. Roll the skewers in the breadcrumbs until completely covered in breadcrumbs. Spray or wipe the grill grates with oil so the breadcrumbs don't stick. Place the skewers on the grill and lower the heat to medium.
- Turn the chicken every 4 minutes. Grill for about 15 minutes or until the chicken reaches 165 degrees F. Remove the chicken from the grill and squeeze lemon juice over the chicken for extra flavor.
3-4 days in airtight container
- You need to spray or wipe the grill grates with oil, or the breadcrumbs will definitely stick. It's okay if it sticks a little. Don't turn the chicken too soon or all the breadcrumbs will fall off.
- You can get away with a short marinade but the flavor comes from the marinade soaking into the chicken. Make this all ahead of time so you have some time to let this marinate!
