These ginger molasses cookies are a classic holiday treat loaded with warm spices. They're the perfect addition to any festive cookie platter!

SPECIAL EQUIPMENT:
STAND MIXER OR HAND MIXER
Preheat the oven to 350°F.
In the bowl of a stand mixer (or with a handled mixer) cream together the butter and sugars until fully combined. Add in the egg and molasses and mix on medium speed until incorporated; if the mixture looks a bit curdled that's okay.
Add in all of the dry ingredients and mix until everything comes together and you get a smooth cookie dough.
Using a cookie scoop or tablespoon, scoop out the cookie dough and roll each ball in granulated sugar. Place the cookie dough on a parchment lined sheet pan and bake the cookies for 9-11 minutes.
Let cool for a few minutes and enjoy!
4 days at room temperature in an airtight container or up to 4 weeks in the freezer
If you don't have parchment you can bake the cookies directly on a sheet pan.
