- Preheat the oven to 350°F and spray a 9×5-inch loaf pan with non-stick cooking spray.
- In a large bowl, add the eggs, sugar, sour cream and oil. Whisk vigorously until smooth. Add in the lemon zest and juice, and stir well to combine. Stir in the flour, baking powder and salt. Mix until just combined. It’s okay if it’s a bit lumpy. Pour batter into prepared loaf pan and bake for about 45 to 50 minutes or until a cake tester comes out clean.
- Allow the loaf to cool in its pan on top of a wire rack for 30 minutes then turn the loaf out onto the rack to finish cooling. Make sure the loaf has cooled completely before glazing.
- For the hibiscus glaze, in a medium bowl, whisk the powdered sugar, hibiscus powder and lemon juice until smooth and combined. If you want a thinner glaze use 2 ½ cups of powdered sugar. For a thicker glaze increase the amount to 3 cups. Evenly spread or drizzle the glaze over the lemon loaf. Allow the glaze to set up for about 10 minutes before slicing and serving.
