- First, prep your veggies. Mince the onion and finely chop the red bell pepper.
- Heat a tbsp of olive oil in a Dutch oven, or large pot, over medium heat. Add the onion and red pepper, and cook until slightly softened and translucent, about 5–7 minutes.
- Now, brown the beef. Add in the ground beef, breaking it up as you cook, and cook until mostly browned with just a hint of pink. Spoon off excess fat if needed. The beef will finish cooking as the chili simmers. Don’t overdo it now or the meat can get tough.
- Now add in the spices, to bloom them and enhance their flavors. Add chili powder, paprika, cumin, salt and black pepper. Stir for 30-60 seconds until fragrant.
- In a small bowl, whisk the tomato powder with 2 cups of vegetable or beef broth until smooth, and pour into the pot.
- Add more broth to reach your preferred chili consistency, then stir in your canned beans and diced tomatoes.
- Reduce heat to low and simmer for 15-20 minutes, stirring occasionally, until the flavors come together.
- Adjust salt and pepper to taste. Ladle into bowls and finish with your favorite toppings!
