Mango Hibiscus Cake

ingredients
FOR THE MANGO CAKE:
3 cups all purpose flour
1 cup sugar of choice
3 tsp baking powder
1 tsp baking soda
2 tbsp mango juice powder
2 cups fresh mango pure (3-4 large mangoes)
½ cup liquid coconut oil
¾ cup canned coconut milk mixed with 1 TBSP vinegar
1 tsp vanilla
FOR THE HIBISCUS FROSTING:
3-4 cups icing sugar
¾ cup vegan butter
2-3 tbsp hibiscus flower powder
1-3 tbsp milk

a little bit about the recipe
A light and moist mango cake with a fluffy hibiscus buttercream frosting. This recipe is made vegan.

  • Preheat oven to 350 F.

  • In a large bowl whisk together all of your dry cake ingredients. Flour, sugar, baking powder, baking soda, mango powder.

  • Add wet ingredients and mix well: mango purée, coconut oil, coconut milk + vinegar, vanilla.

  • Generously oil your cake pans, separate your batter evenly into cake pans.

  • Bake for 25-35 minutes (or until cakes are golden and a toothpick comes out clean).

  • Once cakes have cooled for 20-30 minutes, remove from pans and allow to cool completely before frosting. (I have the best luck when I allow them to cool completely, wrap up and freeze for 20 min before frosting).

  • Assemble frosting by combining all ingredients! Start with less and add more to desired taste/ texture.

  • Sprinkle with hibiscus flower! Enjoy for 5 days if it lasts that long! Store in fridge.
