Tiki Tipple

ingredients
FOR THE FALL SPICE SYRUP
½ cup brown sugar
½ cup water
2 cinnamon sticks
7 cardamom pods (green), whole
10 allspice berries, whole
1 tbsp ginger root, ground
1 tbsp orange peel (dried), chopped
nutmeg, whole (freshly grated)
FOR THE COCKTAIL
1½ oz aged rum
½ oz (any funky) Jamaican rum
½ oz white rum
1½ oz pineapple juice
1 oz canned coconut milk, unsweetened
1 oz lime juice
1 oz Fall Spice Syrup
3 dashes orange bitters
1 dash pumpkin pie spice (seasonal blend), powder

Make the fall spice syrup (note this will add additional prep time):
Place brown sugar, water, cinnamon sticks, cardamom pods, allspice berries, dried ginger, dried orange peels, freshly ground nutmeg. Bring to a boil and simmer for 5 minutes. Cover and turn heat off to cool for 1 hour. Strain out the solids. Keeps in the fridge for 2 weeks.


Make the cocktail:
Shake everything with ice and strain into a tiki glass or mug with pebble ice. Garnish with cinnamon, lime, and pineapple. Serve with a straw.
