Coarse salt is harvested all summer whenever mild weather combines an appropriate amount of wind and sun for the salt to be concentrated through the effect of evaporation. On such days, in late afternoon, the salt worker uses a "las" (wide wooden rake) to push the salt to the edges of the "œillets" (salt pools) for collection and draining.
The Guérande farming cooperative averages 13,000 metric tons of salt per year.
