Prepare and Sear the Chicken
- Pat chicken thighs dry. Season both sides with kosher salt, onion powder, garlic powder, and lemon juice powder (or zest).
- Heat a large skillet over medium-high. Add olive oil and 1 ½ tbsp butter.
- Once the butter is bubbly, place chicken skin-side down. Sear until the skin is golden and crispy (about 6–8 minutes).
- Flip the chicken. Add 1 tbsp crushed sage and begin basting the chicken with the pan drippings for 5 minutes.
- Cook until internal temperature reaches 165°F. Set aside to rest.
Cook the Gnocchi
- Boil gnocchi in salted water for 2–3 minutes or until they float. Reserve ½ cup pasta water before draining.
Make the Creamy Sage Sauce
- In the same skillet (no need to clean), add 5 tbsp butter and heavy cream over medium heat.
- Whisk in garlic, sage, and a pinch of salt. Let simmer, whisking occasionally, until sauce reduces by half (about 7 minutes).
- Stir in reserved pasta water to loosen the sauce slightly.
Combine & Finish
- Gently fold drained gnocchi into the sage cream sauce. Let simmer together for 4–5 minutes so flavors meld.
- Turn off heat and stir in Romano cheese until melted and silky.
Serve
- Plate gnocchi in shallow bowls or on a platter. Top each serving with a crispy chicken thigh.
- Garnish with fresh sage and a sprinkle of Romano cheese.

For extra crisp skin, finish the chicken under the broiler for 90 sec. just before serving.
