a little bit about the recipe
This rainbow ice cream requires only two ingredients along with natural flavorings which gives it both flavor and color. The sweetness from the mango and tartness from the cranberry is balanced by the earthiness of the butterfly pea powder.

  • Thirty minutes before making your ice cream, place an 8x8 baking dish, medium bowl and mixer beaters in the freezer.

  • Remove the bowl and beaters from the freezer, add the heavy cream to your medium bowl and whip until stiff peaks form. Gently fold in the sweetened condensed milk.

  • Divide the mixture into three bowls, about two cups each, but it’s ok if it’s not exact. Into the first bowl add 1 tbsp Butterfly Pea Flower powder and fold gently to mix. To the second bowl add 1 tbsp Cranberry Juice powder and fold gently to mix. To the last bowl add 1 tbsp Mango Juice powder and fold gently to mix.

  • Remove your 8x8 pan from the freezer and drop spoonfuls of the ice cream mixtures, alternating flavors, into the pan. You will have more than one layer, alternate flavors in the layers as well, you should have a bit of a messy checkerboard pattern.

  • Lay a piece of plastic wrap over the top of your pan, touching the ice cream, and freeze overnight. When ready to enjoy, scoop and serve immediately in a bowl or cone.

Ice cream will keep for over a month in an airtight container in the freezer. Store in the back of the freezer so it stays firm.
tips
Start by using 1 tbsp of each powder to flavor/color the ice cream. You can add more for a more intense color or flavor, if desired.
