Chef Dave Martin’s culinary journey kicked off in 2006 when he stepped into the spotlight on Top Chef. What started as a leap of faith quickly turned into a full-fledged career, with Dave earning a reputation for bold flavors, creative technique, and cool-headed confidence in the kitchen.

Today, Dave moves between restaurant kitchens, corporate boardrooms, and the small screen with ease. His work with NYC favorites like Chama Mama and Dalup reflects his love of authentic, regional flavor, while his consulting work with brands like PepsiCo, KFC, and Bertolli keeps him tapped into what’s trending across the country.

Beyond food trucks and product launches, Dave also creates unique culinary experiences—from intimate wine dinners to large-scale events for companies like Cisco and NBC. His cookbook The Tequila Diet celebrates his longtime love for Mexico’s food and culture, and he recently returned to Food Network for Battle of the Decades.

Another classic from the vault and I originally created this for my Gingered Salmon dish and it turns salmon haters into salmon lovers- it's that good. It's versatile, zesty and a great rub for all things from the land, sea and even garden and try it on a head of roasted cauliflower for something totally different.

This warming, zesty blend balances brightness with sweetness, ideal for sprinkling, stirring, or glazing. The star is ginger root powder, supported by a trio of sugars (coconut, brown, and a whisper of nutmeg) that create a caramelized backdrop. Ground cassia cinnamon provides a cozy spice note, while Mediterranean sea salt enhances every layer. Use it as a finishing touch on roasted carrots, stir it into oatmeal, or glaze it onto salmon or sweet potatoes for a ginger-kissed twist.

Sweet + Sassy Smokehouse Rub
This rub has been in my arsenal since my first restaurant in Manhattan Beach, CA and still holds up to the test of time. It's fun, sassy and such an amazing compliment to proteins, veggies or whatever it ends up on.

This bold, smoky blend walks the line between sweet and savory with confidence. It starts with a generous hit of smoked paprika, then layers in the subtle sweetness of maple and molasses sugars. A dash of guajillo chile powder and fine-ground Vietnamese black peppercorn brings gentle heat, while oregano and cumin round things out with earthy, herbaceous depth. Fine Atlantic salt ties it all together, making this a rub that works as well on grilled vegetables as it does on ribs, wings, or brisket.

Whether you're smoking, roasting, or searing, this rub is designed to add swagger.
